I have only used this once in this book (for Tiny Rose and Violet Creams). It can be used to ice cakes too and is available from specialist cake decorating suppliers. It is soft, like the centre of a fondant fancy (so do not confuse it with sugarpaste, which is sometimes confusingly called rolled fondant).
