The great advantage of a cake covered with sugarpaste is that it is sealed, so will keep, if stored in dry conditions, very well for a few days. If it has buttercream underneath this is fine. However, if the icing contains cream or cream cheese it should be in the fridge. Therefore, if using the latter, remember you canโ€™t cover the cake and leave it at room temperature to get ahead by a couple of days. Sugarpaste put in the fridge is a bad idea; it will become sticky.
