Food-grade carrageenan is a purified extract from red algae (Chondrus crispus). It is used as a thickener and stabiliser in a wide range of food products including ice cream. Carrageenan is a naturally sourced material with little taste or odour and a long history of safe use in food products. Iota dissolves in cold water and is heated for a soft gel that does not form while the mixture is stirred. Kappa will mix while cold and its rapid setting allows the user to cover ingredients. Once set it can withstand temperatures of up to 60°C (140°F). Lambda is non-gelling, high viscosity and cold-soluble.
