Gelatine is a colourless, odourless substance made from collagen derived from animal byproducts. Throughout this book, leaf gelatine has been used. Leaf gelatine is sold at specialty food stores and delis. Gelatine sheets are available in different strengths and weights: titanium (5 g), bronze (3.3 g), silver (2.5 g), gold (2 g) and platinum (1.7 g). One sheet of gelatine will set 100 ml (3½ fl oz) of liquid to a firm (mouldable) jelly, or 125 ml (4 fl oz/½ cup) to a soft jelly.
