For four people I use 200g of rice. Wash it as above and soak it if you have time. When you are ready to cook, give it one final wash and rinse and then put it in a saucepan with a litre of water. Bring to the boil and then simmer for five minutes. Check a few grains of rice. They should be tender but still retain a little bite. If itβs not quite there leave it to simmer for another few minutes. Take the pan to the sink, pour in cold water from the running tap and then drain the rice in a sieve. It should be fluffy.
