A handful of fresh green chillies goes into the weekly shop. I finely chop or blitz them in the food processor and then store them in a sterilised jar covered with a thin layer of sunflower or rapeseed oil. I find that this way you get a more consistent heat without having to figure out which ones are hotter than others and how many to use.
