If you have never had a go at sprouting, mung beans are a great place to start. Wash them well and soak them for a few hours. Rinse and then leave them on a damp tea towel unbothered for a few days. You’ll see sprouts forming. You can then gather them up and freeze them. Add them to Vagharela Bhaath or Pawa Bateta.
