Melting Chocolate

Bittersweet chocolate is used to draw different designs and to write on many of these tarts.
There are several ways to melt a small quantity of chocolate: Begin by placing finely chopped chocolate in a small bowl, preferably metal if not using a microwave.

Option 1: Place the bowl above a pilot light on top of the stove. Let sit until melted, 20 to 30 minutes. (This will take less time if the oven is on.) Stir occasionally.

Option 2: Place 1 inch of water in a medium saucepan and bring to a simmer. Remove from the heat, and float the bowl of chocolate on the water until the chocolate is melted. Pay special care that not a single drop of water enters the bowl of chocolate.
