Flour

Unless otherwise noted, “flour” means unbleached all-purpose flour. An important note, especially for pastries: Different brands of flour can vary greatly in their volume-to-weight ratio, and the way you fill the measuring cup will also affect density. For the best results, we highly recommended measuring flour by weight instead of volume.
