Chayote is a tender squash from the same family as melons, cucumbers and squash. When handling chayóte, the vegetable releases oil that sticks to our hands like wax - which is why often you’ll see them individually wrapped in plastic. I simply wear gloves when handling it while other Brazilians peel it under running water.
