Minas cheese is to Brazil what feta is to Greece, or what mozzarella is to Italy. The taste is also a cross between a feta, a ricotta and mozzarella. Brazilians eat Minas cheese throughout the country, but Mineiros (people born in Minas Gérais) are really proud to have created it in their state of Minas Gérais, hence the name. Minas cheese, made from cow’s milk, is white, fresh and firm. Like other fresh white cheeses, Minas has a way of complementing other flavours without masking them, and it definitely deserves more attention on its own. It is mostly consumed fresh but the cheese can also be ripened to various degrees: fresco (fresh), meia-cura (semi-ripened) and curado (ripened).
