There are many variations of this versatile pastry, all with varying thicknesses, sizes and oil contents. Although they are similar, they behave very differently. For pies such as spanokopita, you want the thicker ‘rustic’ stuff. For baklava and portokalopita you want the thinnest filo pastry you can find. Most large supermarkets will have the standard thicker variety but make a brief visit to a Middle Eastern supermarket and your mind will be blown by the options available.
