Pastourma sausage

This spicy sausage differs depending on where in the Mediterranean it comes from. In Cyprus it is made from pork and in Turkey from beef but they both contain red wine, garlic, coriander seeds and black pepper. If you can’t find it, use a good quality Italian sausage.
