A fleshy, small variety of tomato that is often used to make tomato sauces. Romas grow well in dry heat and so are often grown in Burma in the dry season. Other tomatoes can be substituted, though it’s best to cook them down a little, or pour off some of their liquid, since they are generally less fleshy and dense than Romas.
