This coarse-textured pale-yellow flour is ground from durum wheat. It is used for making pasta and for a number of both savory and sweet dishes in the northern part of the Indian subcontinent. It is sold in Italian groceries and large supermarkets, as well as in Indian groceries, where it is usually labeled sooji or suji.
