Illicium verum. Used more often in Chinese and Vietnamese cooking (for example, to flavor the beef broth used for pho) than in Burma, star anise is a brown-colored, star-shaped spice about ½ inch in diameter, with a penetrating warming anise flavor and aroma. It is sold in Asian groceries and well-stocked specialty shops. Store, like any spice, in a well-sealed jar away from heat and light. Use sparingly, for its flavor is intense.
