Vigna sesquipedalis. These attractive green beans, about 18 inches long, are a wonderfully useful and delicious version of bean. They’re now widely sold in Asian groceries. The Burmese name is pei daungshayi. They can be eaten raw or lightly cooked, chopped into 1- to 2-inch lengths, as part of a vegetable side-plate or as a Burmese salad (see Long-Bean Salad with Roasted Peanuts); they also make a good addition to curries.
