Called chicharrones in Mexico and the Philippines, this is a snack food and ingredient among Tai peoples, including the Shan (see Three-Layer Pork with Mustard Greens and Tofu, for example). It is made by slowly frying pieces of pig skin until the fat is rendered, leaving it crisp and cracker-like. See also Pork Belly Skin.
