The root of Allium tuberosum is grown in Yunnan, in northern Thailand, and in the Shan areas of Burma, where it’s known as jumyit. It looks like a bunch of white spidery roots. The Shan and other peoples in the region use it chopped in sour soups and in pickles, or eat it raw with rice. The flavor is oniony and earthy, the texture chewy.
