Ceviche is traditionally made with a raw fish or shellfish that is “cooked” in citrus juice and mixed with other seasonings. Today, the term is sometimes extended to other foods, like fruit, as in our Strawberry-Lychee Raspado with Tropical Fruit Ceviche. For a longer discussion of ceviches.
