Masa harina is cornmeal or corn flour typically sold in 1-kilo (2.2-pound) bags that are used for tamales and tortillas. I use Maseca brand. There are different grinds, from fine to coarse, as well as different colors, including blue. The term masa refers to any type of โ€œdoughโ€; it takes many forms including tortillas, tamales, and empanadas.
