Mexican Chocolate is coarsely ground with sugar and sometimes flavored with cinnamon, almonds, and vanilla. It is an essential ingredient in dark mole sauce. This rustic-style chocolate, most famously from the town of Oaxaca, is somewhat gritty in texture from the granulated sugar used in making it. It is not overly sweet.
