There is really only one proper way in which to hold chopsticks, despite what you may be told and despite what you may see. Since you are learning to master all of the other Chinese cooking techniques, you should master eating with chopsticks as well.
There is also a proper way to hold a rice bowl, a soup bowl, and one of those small, oval porcelain soup spoons.
