Ducks should be fresh-killed as well. All of the shopping criteria for chickens apply to ducks. If fresh-killed ducks are not available, you may use frozen ducks. Again, look for dates and signs that will indicate relative freshness, or its lack, before making your purchase. Frozen ducks can be used in all recipes.
