When you are buying fish, any fish, buy freshness. Look for eyes that are clear, not cloudy, and gills that are red. If the fish has been frozen, its eyes will seem to have sunk into its head. Obviously the best fish to buy should be swimming, but that is not always possible. Perhaps what you should do is befriend a fisherman!
