Mostly imported from St Vincent, is a white starchy powder made from the underground rhizome of the Maranta arundinacea. It is very popular as a thickening agent in Caribbean sauces and gravies to which it gives a light and delicate quality. It is also used in desserts and in the making of cakes and biscuits. It is widely available.
