The fruit of an evergreen tree native to Asia, but now cultivated in tropical and semi-tropical regions throughout the world. All mangoes are green when unripe, and vary, in colour when ripe from green-skinned to a deep rose red. The flesh varies from a light yellowy to a deep orange yellow. Mangoes are ripe when the flesh yields to gentle pressure. They range in weight from about 10 ounces to about 1Β½ pounds. They are used a great deal in island cooking, the hard, unripe mango for chutney and relishes, while ripe mangoes may be eaten by themselves, or made into jam, pies, ice cream and drinks.
