Also called roucou, annatto is used as a natural coloring agent. To make what is known as red oil, cook about 1 part annatto seeds in 4 parts oil over medium heat. In the French West Indies this is typically made with palm oil and is known as beurre rouge (French for “red butter,” but not to be confused with classic beurre rouge, made with butter and red wine). Red oil is used as a coloring agent in French West Indian cuisine. It can also be used in place of saffron.
