Not to be confused with plantains, these are simply unripe bananas with a dark green skin. They have their own unique flavor, nothing like ripe bananas, and they are a staple in Saint Lucian cuisine. They are usually peeled and boiled in salted water. During the process, their color goes from white to pinkish brown or gray.
