Usually available in cans in salted water, hearts of palm are used in fritters in the French-speaking islands and some salad dishes in the Spanish-speaking islands. In this book, I use them in Hearts of Palm and Tofu Scramble and Eggplant, Hearts of Palm, and Spinach Stew.
