Liquid smoke, made by condensing smoke, is used to add a smoky flavor to food. Liquid smoke can be used in recipes that would traditionally contain smoked meat. All liquid smoke is not created equal. Some brands are more concentrated than others, so start with a small amount and add more to taste. Some popular brands are Colgin and Haddon House. There are different flavors of liquid smoke, including mesquite and hickory.
