Some of the entrées in this book use textured vegetable protein (TVP), seitan, and other meat substitutes. In most cases, you can use whatever meat substitute you prefer. If you do not like meat substitutes, you can use beans instead. Some commercial meat substitute brands that I recommend are Gardein, Morningstar Farms, and Butler Soy Curls, or TVP chunks or granules, depending on the recipe.
