When I was growing up I never ate butter—not because we could not afford it, but because margarine was more readily available. Many islands make their own margarine, which is loosely referred to as butter. Currently, I use Earth Balance, a soy-free nonhydrogenated vegan margarine. Some margarines contain whey or milk solids, so read the labels closely before you buy.
