Also known as gungo peas in Jamaica and gandules in the Spanish-speaking islands, pigeon peas are available canned, fresh, frozen, or dried. Each of these versions has a different flavor. Fresh or frozen pigeon peas give the true taste of the pea. Pigeon pea rice is a staple on most of the islands.
