Also known as banane jaune or plátanos, plantains look like large bananas. The plantains that grow in the Caribbean are bright yellow and sweeter than those from Mexico, which have darker skins. Plantains should always be cooked before eating. They can be steamed or boiled in the skin or peeled and fried. They are usually served as a side dish (see Steamed Plantains with Sauce Chien).
