Quinoa is an ancient plant grown for its seeds. It is available in white, red, and black varieties. When packaged commercially, quinoa is usually washed to remove the saponins (naturally occurring compounds that cause foaming), but check the label to be sure. It is high in protein, dietary fiber, and B vitamins.
