These are some of the hottest peppers in the world. They are cousins to habaneros, which can be used as a substitute. When working with these peppers and other hot peppers, remember that the seeds and membranes pack the most heat. Try to avoid touching the seeds and interior of the peppers. It is a good idea to wear gloves. For chopping, you can hold the pepper with a fork, instead of your hands. Scotch bonnets can be frozen whole, and this freezing process tends to cut down the heat factor a little (see photo).
