Sold in dehydrated chunks or granules or sometimes sold refrigerated, textured vegetable protein can be rehydrated quickly, marinated, and prepared. To rehydrate, pour hot water to just cover the granules or chunks and leave for about ten minutes to soak; pour off any excess water and marinate per the recipe instructions.
