This is a traditional cheese, handmade with unpasteurized cow’s milk from the village of Camembert in the territory of Orme. The maker, François Durand with his wife and son, is the last remaining independent producer of Camembert in the village of Camembert, as the other farms that produce this cheese are now part of cooperatives or much bigger productions taking milk from numerous farms in the area. The cheese comes to us at La Fromagerie quite young, but after two weeks maturing in our temperature- and humidity-controlled rooms it acquires a beautiful soft and pliable texture with a surprisingly lighter and nuttier aroma.
