Wire easily cuts through firm cheeses, yielding uniform slices of Jack or Cheddar, for instance, ideal for building sandwiches. Forms vary from simple handheld gadgets resembling vegetable peelers to more sophisticated standing board attachments. For the latter, an arm lowers the wire down through a block of cheese. There are also wire “guillotines,” which slide a wire down onto a block from directly above.
