One of the world’s great cheeses, Gorgonzola has a rough, reddish crust and a white to pale yellow interior with blue-green streaks. Creamier and sweeter than Stilton, its flavor is sharp, spicy, and equally complex. Gorgonzola labeled dolce is younger, mild and creamy; naturale or piccante is firmer and more pungent.
