Gorwydd Caerphilly

A regular lunch-box item of generations of Welsh miners, this handcrafted cheese nearly disappeared, until revived by the Trethowan family. Aged for sixty days on the farm, it is snowy white and crumbly at the center and smooth and straw colored closer to its natural rind.
