Also known as Tilsit, this classic Swiss cheese is punctuated with small, irregular holes and covered with a dark yellow rind. It is often flavored with caraway seeds or peppercorns, and pairs well with beer and rye bread. Created by Swiss settlers in Prussia in the nineteenth century, the cheese is named after the city of Tilsit (now Sovetsk, Russia).
