The term toma encompasses a group of soft and semifirm Italian cheeses. This toma from Piedmont has a long and venerable history. Made from the milk of two consecutive milkings, the paste is buttery and rich in texture. Depending on age, the color ranges from pale yellow to russet red and the flavor from sweet to savory.
