Located in southern Indiana, Capriole was one of the earliest producers of artisanal goat cheeses in the United States. Its Sofia, which has a wrinkled, grayish white rind and a fresh milky flavor, is gently marbled with edible ash that increases its alluring tang. Ash also peeks through the bloomy rind of Wabash Cannonball, a small, spherical soft-ripened cheese with a delicate texture that becomes denser and more crumbly with age. Piper’s Pyramide, velvety, creamy, and mildly sweet, with just a hint of mustiness, is sprinkled with paprika in place of the ash, which is how it came to be named after the makers’ red-haired granddaughter, Piper.
