Still-warm milk from its herd of Ayrshire cows is ladled into small molds to make Constant Bliss, the pride of this Vermont sustainable farm. The makers loosely adapted a Chaource recipe to create their sweet and milky, soft-ripened cheese. Shaped in small, stout cylinders, justa hint of orange mold glows under the delicate bloomy rind.
