The Ilepi Major family ages the farm’s rustic Vermont Shepherd cheese in an underground cave for two to six months, turning each wheel every other day. The result is a semifirm sheep’s milk cheese with a brown rind and a delicate, rich, smooth flavor redolent of the herbs and clover the sheep graze on throughout the summer.
