Grayson is made in the style of a Taleggio or Livarot, but with an exceptionally rich, mildly pungent, beefy flavor. This small farmstead producer, located in the mountains of southwestern Virginia, attributes both this unique flavor and the cheese’s warm yellow interior to the rich, diverse grazing land available to the dairy’s Jersey cows.
