Paula Lambert, founder of Mozzarella Company, devises some innovative and uniquely Texan cheeses. Deep Ellum Blue is a semisoft cow’s milk with a supple texture and a robust flavor that is neither too sharp nor too salty. The cheese is bathed in mold rather than injected with it, which creates a blue-tinged exterior but no interior veining. The Hoja Santa is a fresh goat cheese wrapped in the velvety, heart-shaped leaves of the local hoja santa plant, which impart tones of mint and sassafras.
