Sheep dairies are few and far between in the United States, but sheep’s milk cheesesare growing in popularity. Old Chatham is the largest sheep dairy in the country, with a herd of East Friesian crossbred ewes grazing on the hills of the Upper Hudson River Valley. The dairy’s Hudson Valley Camembert has been praised as the best domestic version to date of the much-imitated European cheese. The Roquefort-style Ewe’s Blue is creamy and rich, less salty than Roquefort, with a mellow tang and gorgeous blue-gray veining.
